- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 teaspoon instant yeast
- ¾ cup warm water
- 2 tablespoons olive oil
- ½ cup fresh cilantro, chopped
- ½ cup fresh parsley, chopped
- ½ cup fresh mint, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon paprika
- ½ teaspoon black pepper
- 1 tablespoon lemon juice
Instructions
- In a large bowl, combine the flour, salt, sugar, and instant yeast.
- Gradually add warm water and olive oil to the dry ingredients. Mix until a dough forms.
- Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly greased bowl, cover with a cloth, and let it rise for about 1 hour or until doubled in size.
- In a separate bowl, mix together the chopped herbs, ground cumin, ground coriander, paprika, black pepper, and lemon juice.
- Once the dough has risen, punch it down and divide it into equal portions. Roll each portion into a circle, place a spoonful of the herb mixture in the center, and fold the edges over to seal.
- Heat a skillet over medium heat and cook each stuffed flatbread for about 3-4 minutes on each side until golden brown and cooked through.
