- 12 tablespoons butter
- ½ cup granulated sugar
- 1 large egg (room temperature)
- 1 1/2 teaspoons almond extract
- 2 cups all-purpose flour
- Sliced almonds (as needed)
Instructions
- Add butter and sugar to a mixer bowl and cream until light and fluffy, about 3-4 minutes.
- Add egg and almond extract, and mix for about 1 minute.
- Add flour and mix on low until a smooth dough forms.
- Wrap dough in plastic and refrigerate for 1 hour.
- Preheat oven to 350F and line baking sheets with parchment.
- Flour countertop, roll out dough to 1/4-inch thickness.
- Cut dough into 2 1/2-inch discs and place on baking sheets.
- Place 5 almond slices in the center of each disc.
- Create small holes in each piece using a straw or knife.
- Bake for 10-12 minutes until edges are golden.
- Cool on baking sheets before transferring to wire racks.
- Optionally dust with powdered sugar or cinnamon sugar before serving.
Notes
- Use more flour if the dough is sticky.
- Refrigerate dough if it becomes too soft to roll.
- Monitor baking closely as cookies are thin.
