  • 2 cups all-purpose flour
  • Sliced almonds (as needed)

Instructions

  1. Add butter and sugar to a mixer bowl and cream until light and fluffy, about 3-4 minutes.
  2. Add egg and almond extract, and mix for about 1 minute.
  3. Add flour and mix on low until a smooth dough forms.
  4. Wrap dough in plastic and refrigerate for 1 hour.
  5. Preheat oven to 350F and line baking sheets with parchment.
  6. Flour countertop, roll out dough to 1/4-inch thickness.
  7. Cut dough into 2 1/2-inch discs and place on baking sheets.
  8. Place 5 almond slices in the center of each disc.
  9. Create small holes in each piece using a straw or knife.
  10. Bake for 10-12 minutes until edges are golden.
  11. Cool on baking sheets before transferring to wire racks.
  12. Optionally dust with powdered sugar or cinnamon sugar before serving.
