Slow Cooker Beef Stew: An Amazing Ultimate Recipe


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 medium potatoes, peeled and diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup frozen peas (optional)
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides.
  2. Transfer the beef into the slow cooker.
  3. Layer the potatoes, carrots, onion, and garlic on top of the beef in the slow cooker.
  4. In a separate bowl, combine the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, bay leaf, salt, and pepper. Stir until well mixed.
  5. Pour the broth mixture over the beef and vegetables in the slow cooker.
  6. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the beef is tender.
  7. If using frozen peas, stir them in during the last 30 minutes of cooking.
  8. Once cooked, remove the bay leaf and adjust seasoning if necessary. Serve hot.
