Slow Cooker Beef Stew: An Amazing Ultimate Recipe

- 2 pounds beef chuck, cut into 1-inch cubes
- 4 medium potatoes, peeled and diced
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 cup frozen peas (optional)
- Fresh parsley, chopped for garnish (optional)
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides.
- Transfer the beef into the slow cooker.
- Layer the potatoes, carrots, onion, and garlic on top of the beef in the slow cooker.
- In a separate bowl, combine the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, bay leaf, salt, and pepper. Stir until well mixed.
- Pour the broth mixture over the beef and vegetables in the slow cooker.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the beef is tender.
- If using frozen peas, stir them in during the last 30 minutes of cooking.
- Once cooked, remove the bay leaf and adjust seasoning if necessary. Serve hot.
