Slow Cooker Spanish Chicken is a flavorful dish made with tender chicken breasts, vegetables, and spices, cooked to perfection in a slow cooker.

- 4 boneless, skinless chicken breasts
- 1 large onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup chicken broth
- 1 cup green olives, pitted and sliced
- 1 tablespoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, for garnish (optional)
Instructions
- Season the chicken breasts with salt, pepper, smoked paprika, cumin, and oregano.
- Layer the sliced onion and bell peppers at the bottom of the slow cooker.
- Lay the seasoned chicken breasts on top of the vegetables.
- Sprinkle the minced garlic over the chicken.
- Add the diced tomatoes (with their juices) and chicken broth into the slow cooker.
- Stir in the sliced green olives.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
- Once cooked, remove the chicken and shred it with two forks. Return the shredded chicken to the slow cooker and mix well with the sauce.
- If desired, garnish with fresh parsley before serving.
