Description
Steak Bites are tossed in a flavorful garlic butter sauce or cowboy butter, perfect for busy weeknights or date night at home.
Ingredients

- 1½ pounds ribeye steak
- 1 tablespoon avocado oil (or olive oil)
- 1 teaspoon kosher salt (or more to taste)
- ½ teaspoon freshly ground black pepper (or more to taste)
- ½ cup unsalted butter (at room temperature)
- 4 to 5 cloves garlic (finely minced)
- ¼ cup fresh parsley (finely chopped, plus extra for garnishing)
- 2 teaspoons fresh chives (finely minced or 1 teaspoon dried chives)
- 2 teaspoons Worcestershire sauce
- 2 teaspoons Dijon mustard
- 1 teaspoon lemon juice (optional lemon zest for extra flavor)
- 1 teaspoon paprika
- ½ to 1 teaspoon red pepper flakes
- ½ teaspoon salt (plus more to taste if desired)
- ½ teaspoon freshly ground black pepper (plus more to taste if desired)
Instructions
- If making caramelized onions, start them 45-60 minutes before cooking the steak.
- Slice room temperature steak into large bite-sized pieces, pat dry, and season with salt and pepper.
- Heat oil in a large cast iron skillet over medium-high heat, add steak in an even layer, and sear for 1-2 minutes per side.
- Remove steak when browned on the outside and still pink in the center. Set aside.
- In the same skillet, reduce heat, add butter, and melt while swirling the skillet.
- Add garlic and heat for 30-60 seconds, stirring constantly.
- If making Garlic Butter, add parsley, salt, and pepper. For Cowboy Butter, add all remaining ingredients and adjust flavors as needed.
- Return steak bites to the skillet and toss in the butter sauce for about 1 minute.
- If using caramelized onions, add them now and combine.
- Aim for desired steak temperature: 110-115F for rare, 120-125F for medium rare, 130-135F for medium, 140-145F for medium well, or 150-155F for well done.
- Garnish with fresh herbs and serve immediately with extra butter sauce.
Notes
- Allow steak to reach room temperature before cooking for better results.
- Do not crowd the skillet to avoid steaming the steak.
- Adjust salt and pepper to taste for the butter sauce.
