Description

Steak Bites are tossed in a flavorful garlic butter sauce or cowboy butter, perfect for busy weeknights or date night at home.


Ingredients

  • pounds ribeye steak
  • 1 tablespoon avocado oil (or olive oil)
  • 1 teaspoon kosher salt (or more to taste)
  • ½ teaspoon freshly ground black pepper (or more to taste)
  • ½ cup unsalted butter (at room temperature)
  • 4 to 5 cloves garlic (finely minced)
  • ¼ cup fresh parsley (finely chopped, plus extra for garnishing)
  • 2 teaspoons fresh chives (finely minced or 1 teaspoon dried chives)
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1 teaspoon lemon juice (optional lemon zest for extra flavor)
  • 1 teaspoon paprika
  • ½ to 1 teaspoon red pepper flakes
  • ½ teaspoon salt (plus more to taste if desired)
  • ½ teaspoon freshly ground black pepper (plus more to taste if desired)

Instructions

  1. If making caramelized onions, start them 45-60 minutes before cooking the steak.
  2. Slice room temperature steak into large bite-sized pieces, pat dry, and season with salt and pepper.
  3. Heat oil in a large cast iron skillet over medium-high heat, add steak in an even layer, and sear for 1-2 minutes per side.
  4. Remove steak when browned on the outside and still pink in the center. Set aside.
  5. In the same skillet, reduce heat, add butter, and melt while swirling the skillet.
  6. Add garlic and heat for 30-60 seconds, stirring constantly.
  7. If making Garlic Butter, add parsley, salt, and pepper. For Cowboy Butter, add all remaining ingredients and adjust flavors as needed.
  8. Return steak bites to the skillet and toss in the butter sauce for about 1 minute.
  9. If using caramelized onions, add them now and combine.
  10. Aim for desired steak temperature: 110-115F for rare, 120-125F for medium rare, 130-135F for medium, 140-145F for medium well, or 150-155F for well done.
  11. Garnish with fresh herbs and serve immediately with extra butter sauce.

Notes

  • Allow steak to reach room temperature before cooking for better results.
  • Do not crowd the skillet to avoid steaming the steak.
  • Adjust salt and pepper to taste for the butter sauce.
