- 10 to 14 oz egg noodles (ramen, or preferred noodles)
- 2 to 3 tablespoons vegetable or sesame oil
- 1 lb chicken breast or thighs (thinly sliced)
- Salt and freshly ground black pepper (to taste)
- 4 to 5 garlic cloves (minced)
- ½ cup soy sauce
- 2 to 3 tablespoons honey or brown sugar
- 1 to 2 tablespoons rice vinegar or lime juice
- 1 to 2 teaspoons grated fresh ginger (optional)
- 1 to 2 teaspoons chili paste or sriracha (optional)
- Optional garnish: sliced green onions (sesame seeds)
Instructions
- Cook noodles according to package instructions; drain and set aside.
- Heat oil in a large skillet or wok over medium-high heat. Season chicken with salt and pepper.
- Add chicken to skillet and cook until browned and cooked through. Remove chicken and set aside.
- Add more oil if needed, then sauté garlic and ginger if using until fragrant, about 30 seconds.
- Stir in soy sauce, honey or brown sugar, rice vinegar or lime juice, and chili paste or sriracha if desired. Simmer for 1 to 2 minutes until sauce thickens.
- Return chicken to skillet and add noodles; toss to coat everything evenly with the garlic sauce.
- Garnish with sliced green onions and sesame seeds if desired. Serve warm.
