Enjoy a refreshing glass of homemade Tamarind Juice, bursting with sweet and tangy flavors.
Ingredients

- 5 oz tamarind pulp
- 2 cups warm water
- 1 oz ginger
- 4.5 oz granulated sugar
- 1.5–2 tablespoons tamarind concentrate
- 1/3 cup water
- 3/4 cup ice
- 2 teaspoons roasted unsalted peanuts
- 2 teaspoons toasted coconut flakes
Instructions
- In a mixing bowl, add the tamarind pulp and a cup of warm water. Use your fingers to loosen and squeeze the pulp.
- Place a mesh strainer over a saucepan and push the tamarind mixture through it to separate seeds and fibers.
- If any seeds or fibers remain, return them with another cup of water, squeeze again and strain.
- Place the saucepan over medium heat, add sugar and smashed ginger. Once it starts to boil, lower the heat and skim off foam.
- Cover the saucepan with a lid slightly askew and simmer for 30-35 minutes.
- Transfer the tamarind concentrate to a container once done, or refrigerate it for later use.
- Add 1½ – 2 tablespoons of the concentrate to a glass. Mix in 1/3 cup of water, stir well, add ice, and top with peanuts and coconut.
Notes
- Adjust sugar to your preference for sweetness.
- Use toasted coconut flakes for added texture if desired.
