- 1 tsp baking powder
- 2 tbsp espresso powder
- 1/2 cup unsalted butter (room temperature)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup chocolate chips
- Cocoa powder for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the all-purpose flour and baking powder. Set aside.
- In a large mixing bowl, beat the unsalted butter, granulated sugar, brown sugar, and espresso powder until light and fluffy.
- Beat in the eggs one at a time, ensuring each is fully incorporated. Then mix in the vanilla extract.
- Gradually add the flour mixture to the butter mixture, mixing just until combined. Gently fold in the chocolate chips.
- Scoop dollops of dough onto the prepared baking sheets, spacing them about two inches apart. Bake for about 12 minutes, or until the edges are golden brown.
- Allow the cookies to cool completely on wire racks. Dust with cocoa powder before serving if desired.
