- 4 slices bread (white, whole-wheat, or multigrain)
- 1/4 cup mayonnaise (regular or vegan)
- 1/4 cup grated carrot
- 1/4 cup finely chopped bell pepper (any color)
- 1/4 cup shredded cabbage or lettuce (or mixed)
- Optional: cucumber (sweet corn, grated potato, chopped onion, boiled peas, as desired)
- Salt (to taste)
- Freshly ground black pepper or pepper powder (to taste)
- Butter or butter-like spread (for bread, optional)
Instructions
- In a bowl, mix the mayonnaise, grated carrot, chopped bell pepper, shredded cabbage, and any optional vegetables. Season with salt and pepper and stir well.
- Optionally, lightly butter both sides of each bread slice to add flavor and prevent sogginess.
- Spread a generous layer of the mayo-vegetable mixture over one slice of bread and top it with another slice.
- If preferred, grill or toast the sandwich using a sandwich maker or hot pan until golden brown and crispy.
- Cut the sandwich diagonally or as desired and serve immediately.
