- 2 ripe avocados (about 1 cup, pitted and diced)
- 1/2 cup fresh cilantro (chopped)
- 1/4 cup fresh lime juice (from about 2 limes)
- 1 small jalapeño pepper (seeded and quartered)
- 1/2 tsp salt (adjust to taste)
Instructions
- Rinse tomatillos under cool water after removing their husks. Cut them into quarters.
- In a food processor, combine tomatillos and jalapeño; pulse until chunky.
- Add avocados and blend until combined but still slightly chunky.
- Mix in lime juice and cilantro; pulse gently until incorporated.
- Season with salt to taste and stir lightly before serving.
