Description

A delightful blend of smoky, tangy, and fresh elements, this BBQ Ranch Chicken Cobb salad features grilled chicken, mixed greens, avocado, tomatoes, and hard-boiled eggs, all topped with ranch dressing and BBQ sauce.


Ingredients

  • 500 g (1 lb) boneless, skinless chicken breasts
  • 120 ml (½ cup) BBQ sauce
  • 200 g (2 cups) mixed greens or romaine lettuce
  • 1 avocado, sliced
  • 250 g (2 cups) cherry tomatoes, halved
  • 2 large eggs, hard-boiled
  • Additional ranch dressing and BBQ sauce for drizzling

Instructions

  1. Marinate chicken breasts in BBQ sauce for at least 10 minutes.
  2. Preheat your grill to medium-high heat (200°C/400°F) and grill chicken for 6-8 minutes per side until cooked through.
  3. Chop mixed greens, slice avocado, halve cherry tomatoes, and boil eggs for about 9 minutes, then cool and slice.
  4. Layer the greens in a large bowl, followed by sliced chicken, tomatoes, avocado, and sliced eggs.
  5. Drizzle with ranch dressing and BBQ sauce, then gently toss to combine all ingredients.
