- 120 ml (½ cup) BBQ sauce
- 200 g (2 cups) mixed greens or romaine lettuce
- 1 avocado, sliced
- 250 g (2 cups) cherry tomatoes, halved
- 2 large eggs, hard-boiled
- Additional ranch dressing and BBQ sauce for drizzling
Instructions
- Marinate chicken breasts in BBQ sauce for at least 10 minutes.
- Preheat your grill to medium-high heat (200°C/400°F) and grill chicken for 6-8 minutes per side until cooked through.
- Chop mixed greens, slice avocado, halve cherry tomatoes, and boil eggs for about 9 minutes, then cool and slice.
- Layer the greens in a large bowl, followed by sliced chicken, tomatoes, avocado, and sliced eggs.
- Drizzle with ranch dressing and BBQ sauce, then gently toss to combine all ingredients.
- Serve immediately to maintain freshness.
