Description

This bright and crunchy broccoli salad is a perfect side dish that packs a flavorful punch and adds a delightful crunch to any meal.


Ingredients

  • 450 g (about 1 pound) fresh broccoli florets
  • 100 g (1 cup) sharp cheddar cheese, chopped
  • 150 g (about 1.5 cups) crispy cooked bacon, chopped
  • 1/2 small red onion, thinly sliced
  • 120 ml (1/2 cup) mayonnaise
  • 30 ml (2 tablespoons) apple cider vinegar
  • 15 g (1 tablespoon) sugar

Instructions

  1. Prepare the broccoli: Wash and dry the broccoli, cut into bite-sized florets and place in a large mixing bowl.
  2. Add other ingredients: Chop the cheddar cheese and bacon, slice the red onion, and add everything to the bowl with the broccoli.
  3. Make the dressing: In a separate bowl, whisk together mayonnaise, vinegar, and sugar until smooth.
  4. Combine everything: Pour the dressing over the broccoli mixture and toss gently to coat all ingredients evenly.
  5. Chill and serve: Cover the salad and refrigerate for at least 30 minutes before serving.

Notes

For a vegetarian version, replace bacon with roasted chickpeas. Make the salad a day in advance but add cheese and bacon just before serving.
