- 450 g (about 1 pound) fresh broccoli florets
- 100 g (1 cup) sharp cheddar cheese, chopped
- 150 g (about 1.5 cups) crispy cooked bacon, chopped
- 1/2 small red onion, thinly sliced
- 120 ml (1/2 cup) mayonnaise
- 30 ml (2 tablespoons) apple cider vinegar
- 15 g (1 tablespoon) sugar
Instructions
- Prepare the broccoli: Wash and dry the broccoli, cut into bite-sized florets and place in a large mixing bowl.
- Add other ingredients: Chop the cheddar cheese and bacon, slice the red onion, and add everything to the bowl with the broccoli.
- Make the dressing: In a separate bowl, whisk together mayonnaise, vinegar, and sugar until smooth.
- Combine everything: Pour the dressing over the broccoli mixture and toss gently to coat all ingredients evenly.
- Chill and serve: Cover the salad and refrigerate for at least 30 minutes before serving.
Notes
For a vegetarian version, replace bacon with roasted chickpeas. Make the salad a day in advance but add cheese and bacon just before serving.
