Description

A vibrant and flavorful dip combining black beans, corn, and colorful vegetables with a zesty dressing, perfect for gatherings.


Ingredients

  • 1 can black beans (about 400 g or 15 oz), rinsed and drained
  • 340 g (12 oz) corn, drained
  • 1 bell pepper, diced
  • 1/2 red onion, diced
  • 2 jalapeños, diced
  • 1/4 cup fresh cilantro, roughly chopped
  • Juice of 2 limes
  • 60 ml (1/4 cup) olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Prepare the ingredients by dicing the bell pepper, red onion, and jalapeños. Rinse black beans and drain corn.
  2. Combine the black beans, corn, chopped bell pepper, onions, jalapeños, and cilantro in a large mixing bowl.
  3. Make the dressing by whisking together lime juice, olive oil, salt, and pepper in a small bowl. Pour over the bean mixture.
  4. Toss all ingredients gently to coat with dressing and allow to rest for at least 5 minutes for flavors to meld.

Notes
