Ingredients

- 1 can black beans (about 400 g or 15 oz), rinsed and drained
- 340 g (12 oz) corn, drained
- 1 bell pepper, diced
- 1/2 red onion, diced
- 2 jalapeños, diced
- 1/4 cup fresh cilantro, roughly chopped
- Juice of 2 limes
- 60 ml (1/4 cup) olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Prepare the ingredients by dicing the bell pepper, red onion, and jalapeños. Rinse black beans and drain corn.
- Combine the black beans, corn, chopped bell pepper, onions, jalapeños, and cilantro in a large mixing bowl.
- Make the dressing by whisking together lime juice, olive oil, salt, and pepper in a small bowl. Pour over the bean mixture.
- Toss all ingredients gently to coat with dressing and allow to rest for at least 5 minutes for flavors to meld.
