Description

A bright and refreshing salad made with crisp cucumbers and juicy tomatoes, perfect for warm days.


Ingredients

Scale
  • 2 medium Cucumbers
  • 3 medium Tomatoes
  • 1 small Red Onion
  • 60 ml (¼ cup) Olive Oil
  • 30 ml (2 tbsp) Red Wine Vinegar
  • a handful Fresh Herbs (Chopped Basil or Parsley)

Instructions

  1. Prepare the vegetables by washing cucumbers and tomatoes, patting them dry, slicing cucumbers into half-moons and tomatoes into wedges.
  2. Chop the onion by thinly slicing the red onion; soak in cold water if too strong.
  3. Combine the sliced cucumbers, tomatoes, and red onion in a large mixing bowl.
  4. Prepare the dressing by whisking together olive oil and red wine vinegar, seasoning with salt and pepper.
  5. Dress the salad by drizzling dressing over and gently tossing; let sit for 5-10 minutes before serving.

Notes

Best served fresh. Can be made up to 2 hours in advance. Avoid slicing tomatoes too early to prevent mushiness.
