Description
A warm, buttery cobbler with sweet, juicy peaches, perfect for busy weeknights.
Ingredients
- Fresh Peaches: 1 kg (about 6 medium peaches)
- Sugar: 150 g (3/4 cup)
- Lemon Juice: 15 ml (1 tablespoon)
- All-Purpose Flour: 250 g (2 cups)
- Baking Powder: 10 g (2 teaspoons)
- Butter: 115 g (1/2 cup), unsalted
- Milk: 240 ml (1 cup)
Instructions
- Preheat your oven to 180°C (350°F). In a large bowl, slice the peaches into wedges and mix them with sugar and lemon juice. Let them sit for about 10 minutes to macerate.
- Combine the flour, baking powder, and remaining sugar in another bowl. Add the cold, diced butter and mix until it resembles coarse crumbs. Slowly stir in milk just until combined.
- Pour the peach filling into the prepared baking dish, spreading it evenly. Drop spoonfuls of the batter over the top.
- Bake for 35-40 minutes, or until the topping is golden brown.
- Let the cobbler cool slightly before serving warm with ice cream or whipped cream.
Notes
Avoid soggy bottoms by ensuring peaches are not too watery. You can prepare the filling a day in advance.
